Tomato Cucumber Salad
- 2 cups of diced tomatoes ( prefer roma or sungolds)
- 2 cups of diced cucumbers of any kind (lemon cukes in this batch)
- 1/2 cup thinly sliced red or sweet onion
- 2 TBSP of rice vinegar
- 1 TBSP olive oil
- 2 TBSP dried dill
- salt & pepper to taste
Put all ingredient is small glass bowl.
Cover and place in the refrigerator for at least 30 minutes before serving.
