Tomato Cucumber Salad June 7, 2024September 27, 2021 by Jamie Lynn Whole Food Plant-Based Lifestyle Tomato Cucumber Salad2 cups of diced tomatoes ( prefer roma or sungolds)2 cups of diced cucumbers of any kind (lemon cukes in this batch)1/2 cup thinly sliced red or sweet onion2 TBSP of rice vinegar1 TBSP olive oil2 TBSP dried dillsalt & pepper to tastePut all ingredient is small glass bowl.Cover and place in the refrigerator for at least 30 minutes before serving.
