Tomato Cucumber Salad

  • 2 cups of diced tomatoes ( prefer roma or sungolds)
  • 2 cups of diced cucumbers of any kind (lemon cukes in this batch)
  • 1/2 cup thinly sliced red or sweet onion
  • 2 TBSP of rice vinegar
  • 1 TBSP olive oil
  • 2 TBSP dried dill
  • salt & pepper to taste

Put all ingredient is small glass bowl.

Cover and place in the refrigerator for at least 30 minutes before serving.
